Dear Shaun,

To come back to your original question. Apart from 20000 Leagues, 80 Days, and
Journey to the Centre of the Earth, I would suggest as a 'must' (without knowing
the exact English titles, nor the quality of the translations):

The Children of Captain Grant
The Mysterious Island
>From the Earth to the Moon

Further:

Michel Strogoff
Mathias Sandorf
Un capitaine de 15 ans (A Captain of 15 years?, A Boy's Captain?, Dick Sand?)
Hector Servadac (Off on a Comet)

The latter two may already be a personal impression.

Kind regards
